Careful handpicking in the vineyards of the best grapes that are then de-stemmed and pressed. The maceration process follows, lasting around 18 to 20 days at a temperature not exceeding 30 ° C in stainless steel vats. We then proceed with the maturation and spontaneous malolactic fermentation in tonneaux barrels and barriques of 2nd-3rd passage. Here the wine remains for 12 to18 months in contact with the yeasts which are periodically placed in suspension (batonnages). This is followed by natural stabilization and the assembly of the various components of the most suitable wine, after organoleptic control.
After carrying out a light filtration we proceed with bottling. Finally, the wine ages for 6 months at least, in the bottle.
Intense ruby red
On the nose it revals elegant balsamic notes mixed with scents of flower petals, cherries under spirit, liquorice and chocolate.
