Chianti Colli Senesi DOCG Riserva Fede

Dedicated to Federica, a wonderful woman, mother wife.

This wine has been produced since 2003. 2003 was the year when we began the production with a new vineyard, substituting an older implant that gave the material for the new ones. The new vines implanted in the Baciolo vineyard gives us, each year, the best Sangiovese grapes.

Baciolo, Poggio alle Corti vineyards with mixed clay soil and Pliocene sands.

Guyot growing system.

Careful handpicking in the vineyards of the best grapes that are then de-stemmed and pressed. The maceration process follows, lasting around 18 to 20 days at a temperature not exceeding 30 ° C in stainless steel vats. We then proceed with the maturation and spontaneous malolactic fermentation in tonneaux barrels and barriques of 2nd-3rd passage. Here the wine remains for 12 to18 months in contact with the yeasts which are periodically placed in suspension (batonnages). This is followed by natural stabilization and the assembly of the various components of the most suitable wine, after organoleptic control.

After carrying out a light filtration we proceed with bottling. Finally, the wine ages for 6 months at least, in the bottle.
