The Project – Tre Sorelle e un Cane

Tre Sorelle e un Cane is from San Donato’s new line of wines, created to be fresh, fun, and easy to enjoy on any occasion. It was born from the energy of the new Fenzi generation and the desire to bring leggerezza to the glass: not superficiality, but Calvino-style lightness: a joyful spirit that approaches substance with care and harmony.

The project was brought to life with the witty and charming illustration by William Goldsmith, a London-based artist and friend of Angelica, one of the sisters.

Vernaccia di San Gimignano DOCG – Tre Sorelle e un Cane Bianco (featuring Tino, short for Vermentino: here both the dog in the picture and the grape in the wine!)

Vernaccia sits at the heart of the blend, supported in small part by other local varieties that add aromas and complexity on the nose and palate.
The result is a precise and lively wine, with the typical savoury crispness of Vernaccia that makes it effortlessly convivial and inviting, from the first glass to the last. It is a wine that pays tribute to a tradition that in 2026 celebrates 750 years of history, yet reinterpreted with new energy rather than weight.

Vernaccia di San Gimignano

Vinification:

Selection of the grapes in the vineyard, destemming, pressing and short cold maceration. Soft pressing of the macerate grapes with thepneumatic press. The must begins the fermentation at a controlled temperature of about 15 ° in stainless steel vats and ends in new French oak barrique barrels.

Here it remains for 8-10 months in contact with the yeasts which are periodically suspended (batonnages).

Follows, natural stabilization and then the wines from the most suitable barrels are assembled, after organoleptic control. Later we proceed with pre-bottling filtration and aging for at least 8 months in the bottle.

Bright yellow with golden reflections.

Vibrant perfume of yellow flower, candied fruit, spices

Rich, densely sapid and persistent with acidic nuances that give the wine a pleasant freshness.
