The Tre Sorelle e un Cane Project

Tre Sorelle e un Cane is from San Donato’s new line of wines, created to be fresh, fun, and easy to enjoy on any occasion. It was born from the energy of the new Fenzi generation and the desire to bring leggerezza to the glass: not superficiality, but Calvino-style lightness: a joyful spirit that approaches substance with care and harmony.

The project also celebrates family and our ever-present dogs in the farm, all brought to life with the witty and charming illustration by William Goldsmith, a London-based artist and friend of Angelica, one of the sisters.

Serious in quality, light in spirit the perfect wine meant to be share.

Chianti Colli Senesi Tre Sorelle e un Cane (featuring Merlot: the dog, not the grape!)

This Chianti is made primarily from Sangiovese, with a small percentage of other local varieties, as per tradition. A careful work in the vineyard, the choice of lower yields, and time devoted to the winemaking process allow this classic of the Tuscan tradition to be reinterpreted with freshness and vibrancy.

The result is a balanced wine that remains structured without weight and character without excess, inviting to a second glass after the first sip.

Careful handpcking of the best grapes.

Destemming and slow maceration of the grapes for 12-14 days in stainless steel tanks at a controlled temperature, not exceeding 30 ° C.

Maturation and spontaneous malolactic fermentation in concrete vats. The wine stays in the vats for 6 months in contact with the yeasts that are periodically placed in suspension (batonnages) .

Natural stabilisation in external tanks and, following organoleptic control, blending of the most suitable components. Light pre-bottling filtration.

Aging and refining in the bottle for at least 6 months.
